A garnish designed for duck and sharp cheeses. Cuts the rich fattiness of any waterfowl, turkey, pork butt or shoulder, chuck roasts. Delicious with aged cheddars, Manchego, havarti, gouda, Colby and Jack cheeses. May do well with some of the strong flavored cream cheeses. Raisins in sweet brine, bitter mustard seeds, rosemary and thyme.
